Fennel and radish salad with orange honey vinaigrette

Ingredients:
- 6-8 Radishes (Large)
- 1 Fennel Bulb
- 3 tablespoons Fresh Dill
- 1-2 teaspoons Sesame Seed (Black)
- 2-3 tablespoons Feta Cheese (Optional)
- 1/2 Valencia Orange
- 1/2 teaspoon Honey (Optional)
- 1/4 cup Apple Cider Vinegar
- 1/4 cup Olive Oil
- Salt and Pepper to taste
Instructions:
- Using a mandolin, finely slice the fennel and radishes as if preparing a slaw. In case a mandolin is unavailable, simply cut the radish into thin strips and finely slice the fennel, placing them in a bowl. Remove the fennel's stems and fronds, or keep them aside for another dish.
- Roughly chop the dill and mix it with the radish and fennel.
- Incorporate the sesame seeds into the mixture by tossing them together.
- In a small jar, extract the juice from half an orange. If the oranges are ripe, they will provide enough sweetness, reducing the need for honey.
- To the orange juice, add the vinegar, olive oil, honey (if desired), salt, and pepper. Cover the jar with a lid and shake well to combine.
- Drizzle the dressing over the salad and gently mix until the dressing coats everything evenly.
- For added flavor, you can sprinkle some crumbled feta on top of the salad. A sharp feta is recommended over a creamy or salty variety.
- Serve immediately and savor the dish.
