Fennel and orange salad
Delight in the refreshing flavors of fennel and orange in this zesty and vibrant salad. Perfect for a light and flavorful addition to any meal.
Ingredients:
- tablespoons fresh lemon juice
- tablespoon Dijon mustard
- cup olive oil
- oranges
- large heads of radicchio
- /2 cup thinly sliced fresh mint leaves
Instructions:
- Combine lemon juice and mustard in a small bowl. Slowly add oil while whisking. Season with salt and a generous amount of pepper. Place fennel in a large bowl. Pour the dressing over it and mix well. Adjust seasoning with salt and pepper. (You can prepare this dish a day in advance. Just cover and refrigerate.)
- Remove the peel and white pith from the oranges. Slice the oranges into 1/4-inch thick rounds.
- Arrange whole radicchio leaves on large platters. Layer the orange slices on top of the radicchio. Coat the fennel with the dressing, then place it in the center of the platters. Finish by sprinkling mint over it before serving.
