Fennel and grapefruit salad
Savor the fresh blend of fennel's crispness and grapefruit's tang in this refreshing salad. A burst of citrus with a hint of sweetness in every bite.
Ingredients:
- 1 Fennel bulb (round bulbs usually sweeter)
- 1 Grapefruit (preferably red)
- 1/2 teaspoon Good olive oil
- 1 pinch Sea salt flakes
- Fresh ground black pepper
- few sprigs Fennel frond
Instructions:
- Use a mandolin to thinly cut the fennel onto plates.
- Section the grapefruit on top of the fennel. The juice that comes out will be part of the "dressing".
- Drizzle some high-quality finishing oil. I opted for an Arbequina from Spain.
- Complete the dish with flaky sea salt such as Maldon, freshly ground pepper, and sprinkle a few fennel fronds on top.
