Fennel and grapefruit salad

Savor the fresh blend of fennel's crispness and grapefruit's tang in this refreshing salad. A burst of citrus with a hint of sweetness in every bite.

Ingredients:

  • 1 Fennel bulb (round bulbs usually sweeter)
  • 1 Grapefruit (preferably red)
  • 1/2 teaspoon Good olive oil
  • 1 pinch Sea salt flakes
  • Fresh ground black pepper
  • few sprigs Fennel frond

Instructions:

  1. Use a mandolin to thinly cut the fennel onto plates.
  2. Section the grapefruit on top of the fennel. The juice that comes out will be part of the "dressing".
  3. Drizzle some high-quality finishing oil. I opted for an Arbequina from Spain.
  4. Complete the dish with flaky sea salt such as Maldon, freshly ground pepper, and sprinkle a few fennel fronds on top.
