Faux-tato salad

Indulge in a flavorful Faux-tato salad bursting with fresh ingredients, savory seasonings, and a delightful mix of textures. Perfect for a light and tasty meal.

Ingredients:

  • 1 head cauliflower with stem, chopped into 1-inch pieces
  • 1 cup salted water
  • 3 slices turkey bacon, diced
  • 1/2 cup nonfat plain Greek yogurt
  • 1 tablespoon olive oil
  • 1 tablespoon white wine vinegar
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon dried dill
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 2 scallions (white and green parts), minced
  • 1 stalk celery, small dice

Instructions:

  1. Place the cauliflower and water in a large pot with a cover and cook by steaming until the cauliflower is very soft, about 10 to 12 minutes. Then, strain the cauliflower, let it cool, and pat the pieces dry thoroughly. 
  2. While the cauliflower is being cooked, put the turkey bacon in a nonstick pan and cook until it becomes crispy, which usually takes 3 to 4 minutes. Then, place the bacon on a paper towel to remove excess oil and let it cool down. 
  3. Combine the yogurt, olive oil, vinegar, honey, mustard, dill, salt, and black pepper in a medium-sized mixing bowl. Add the cooled cauliflower and bacon into the mixture, along with the scallions and celery. Mix well to combine all the ingredients. It is recommended to refrigerate the dish for 1 to 2 hours before serving (or overnight) for better flavor, but it can also be served immediately.
