Fattoush salad
Indulge in the flavors of the Middle East with this refreshing Fattoush salad. Packed with fresh vegetables, herbs, and a tangy sumac dressing.
Ingredients:
- 2 whole-wheat pita breads, split and torn into 1-inch pieces
- ¼ cup lemon juice
- 3 tablespoons extra-virgin olive oil
- ½ teaspoon kosher salt
- ½ teaspoon ground pepper
- 3 cups thinly sliced red cabbage
- 3 cups chopped romaine lettuce
- 1 cup grape or cherry tomatoes, halved
- 2 Persian cucumbers, sliced
- 2 scallions, thinly sliced
- 1 cup chopped fresh parsley
Instructions:
- Heat the oven to 190 °C.
- Place pita chunks in a single layer on a large baking sheet with edges. Cook, stirring occasionally, until they become crunchy, for about 10 to 15 minutes. Allow them to cool down to the room temperature, roughly 5 minutes.
- While waiting, mix together lemon juice, oil, salt, and pepper in an extra-large bowl. Put in cabbage, lettuce, tomatoes, cucumbers, scallions, and parsley, then mix. Include the baked pita pieces and mix until everything is well combined.
