Fattoush salad

Indulge in the flavors of the Middle East with this refreshing Fattoush salad. Packed with fresh vegetables, herbs, and a tangy sumac dressing.

Ingredients:

  • 2 whole-wheat pita breads, split and torn into 1-inch pieces
  • ¼ cup lemon juice
  • 3 tablespoons extra-virgin olive oil
  • ½ teaspoon kosher salt
  • ½ teaspoon ground pepper
  • 3 cups thinly sliced red cabbage
  • 3 cups chopped romaine lettuce
  • 1 cup grape or cherry tomatoes, halved
  • 2 Persian cucumbers, sliced
  • 2 scallions, thinly sliced
  • 1 cup chopped fresh parsley

Instructions:

  1. Heat the oven to 190 °C.
  2. Place pita chunks in a single layer on a large baking sheet with edges. Cook, stirring occasionally, until they become crunchy, for about 10 to 15 minutes. Allow them to cool down to the room temperature, roughly 5 minutes.
  3. While waiting, mix together lemon juice, oil, salt, and pepper in an extra-large bowl. Put in cabbage, lettuce, tomatoes, cucumbers, scallions, and parsley, then mix. Include the baked pita pieces and mix until everything is well combined.
