Farro salad with winter fruit, pistachios and ginger

Ingredients:
- Salt
- 1 ½ cups farro (280g)
- 1 teaspoon finely grated orange zest
- 1 tablespoon fresh orange juice
- 1 tablespoon fresh lemon juice
- 1 tablespoon finely grated ginger
- ¼ cup extra-virgin olive oil
- ¼ cup golden raisins
- ¼ cup dried sour cherries
- 2 scallions (thinly sliced)
- ⅓ cup salted roasted pistachios (chopped)
- ¼ cup chopped mint
- 2 tablespoons chopped cilantro
Instructions:
- Start by boiling a big saucepan of water with a pinch of salt. Put the farro in and let it cook over medium heat until it's slightly firm to the bite, approximately for 35 minutes. Once done, drain the farro properly, making sure to get rid of any excess water.
- While waiting for the farro to cook, mix the orange zest, orange juice, lemon juice, ginger, and oil in a roomy bowl. Whisk the ingredients together until they are well combined. Taste and season with some salt if needed.
- Combine the cooked farro with the prepared dressing, along with the raisins and cherries. Mix everything properly. Allow it to sit until the farro cools down. Just before serving, add the scallions, pistachios, mint, and cilantro into the mixture. Give it a gentle stir and season with salt to enhance the flavors.
