Farro salad with kale and blood oranges

Ingredients:

  • 1 1/2 cup farro
  • 1 handful fresh basil, roughly chopped
  • 3/4 cup dried cranberries
  • 90g goat cheese, crumbled
  • 2 blood oranges, peeled, separated, and cut into 1/2-inch pieces
  • 1/2 head of kale, stems removed and roughly chopped

Instructions:

  1. Prepare farro as instructed on the packaging.
  2. While the farro is cooking, mix together all remaining ingredients in a large mixing bowl. Once the farro is cooked, transfer it to a different bowl to cool down. Once the farro has reached room temperature, combine it with the other ingredients. Your dish is now ready to be served!
