Farro salad with brown butter vinaigrette
Delight your taste buds with the nutty goodness of farro salad dressed in a luscious brown butter vinaigrette. A wholesome and flavorful dish!
Ingredients:
- 3/4 cup farro
- 1 1/2 tsp kosher salt
- 1 lb asparagus, trimmed and cut into 3-in. pieces
- 1 cup frozen petite peas
- 2 oz feta cheese, crumbled (about 1/2 cup), divided
- 1/4 cup salted roasted pistachios, divided
- 2 medium navel oranges, peeled and sliced into segments, divided
- 2 tbsp chopped fresh tarragon
- 1/4 cup (1/2 stick) unsalted butter
- 2 tbsp olive oil
- 2 tbsp balsamic vinegar
- 2 tsp maple syrup
- 1 tsp Dijon mustard
- 3/4 tsp kosher salt
- 1/4 tsp freshly ground black pepper
Instructions:
- In a medium saucepan, mix together farro, salt, and 2 cups of water. Bring it to a boil over high heat. Then, lower the heat, cover the saucepan, and let it simmer until the farro becomes tender and all the liquid is absorbed, which usually takes around 30 minutes. When there are 5 minutes left, add asparagus and peas, and continue cooking while covered. Once done, transfer the mixture to a large bowl to cool down slightly.
- In a small saucepan, heat butter over medium heat until it melts. Stir constantly until the butter turns a light brown color and releases a nutty aroma, which typically takes about 5 minutes. Remove the saucepan from the heat and allow the butter to cool for 5 minutes. Then, whisk in the oil.
- In a high-sided bowl, whisk together vinegar, syrup, mustard, salt, and pepper until well combined. Slowly pour the butter mixture into the bowl while whisking continuously until the dressing is smooth and properly emulsified.
- Combine half of the feta, half of the pistachios, and 3/4 of the orange segments with the farro mixture. Add the prepared dressing and mix everything together.
- Transfer the mixture to a serving bowl. Garnish with the remaining pistachios, feta, and orange segments. Finally, sprinkle some tarragon on top before serving the dish warm.
