Farro salad

Ingredients:

  • 4 tablespoons olive oil, divided
  • 2 medium sized beets, scrubbed and dried
  • 1/2 cup farro, dry
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon lemon juice
  • 2 medium sized carrots, thinly sliced on a mandolin
  • 2 small Persian cucumbers or 1 larger cucumber, thinly sliced on a mandolin
  • 3 scallions, chopped
  • 1 tablespoon chives, chopped
  • 3/4 cup feta
  • Kosher salt and pepper to taste

Instructions:

  1. Preheat your oven to 425F.
  2. Drizzle 1 tablespoon of olive oil over the beets and wrap them in aluminum foil. Place them in the oven and bake for 25-35 minutes, until they can be easily pierced with a fork. Allow them to cool completely.
  3. While the beets are baking, prepare the farro following the instructions on the packaging. Let it cool down as well.
  4. Combine 3 tablespoons of olive oil, balsamic vinegar, and lemon juice in a small bowl. Mix well and set it aside.
  5. Once the beets have cooled, cut them in half and use a mandolin to slice them thinly. In a large bowl, mix together the beets, carrots, farro, scallions, chives, and feta cheese. Add the dressing and toss everything together until coated. Season with salt and pepper to your liking.
