Farro and broiled tomato salad

Indulge in the delicious blend of nutty farro and juicy broiled tomatoes in this satisfying and flavorful salad. Perfect for a healthy and tasty meal!

Ingredients:

  • 1 cup Farro
  • 2 1/2 cups Vegetable Stock (or water)
  • 1 cup Cherry Tomatoes
  • 1/2 cup Garbanzo Beans
  • 1/2 cup Fresh Mozzarella, I like the bocconcini mozzarella balls
  • 1 bunch Basil
  • 1/4 cup and 1 tablespoon Olive Oil, divided
  • 3-4 tablespoons Balsamic Vinegar
  • Sea Salt
  • Black Pepper

Instructions:

  1. Prepare the farro by soaking it in cold water for approximately 20 minutes before cooking. Then, mix the farro with 2 1/2 cups of broth or water. Bring the mixture to a boil, then lower the heat to simmer. Cover with a lid and let it simmer for 15-20 minutes until the farro is tender but still firm. Rinse the farro with cold water to halt the cooking process and set it aside. The farro should be warm, not hot.
  2. While the farro is cooking, broil the tomatoes. Preheat the broiler. Coat the tomatoes with one tablespoon of Olive Oil and place them in a baking dish with sides. Broil for 3-5 minutes until the tomatoes are blistered and the skin starts to peel off.
  3. In a mason jar, mix together balsamic vinegar, salt, and pepper. Shake well to blend. Combine all the components in a large bowl. This salad improves in flavor as it rests and can be stored in the refrigerator for several days.
