Farmers' market salad

Fresh and vibrant farmers' market salad bursting with seasonal flavors of ripe produce and tossed in a zesty vinaigrette. A true culinary delight!

Ingredients:

  • 1 cup shelled walnuts
  • 1/4 cup olive oil 
  • 2 tablespoons miso paste 
  • 2 tablespoons white wine vinegar 
  • 2 teaspoons honey 
  • Juice of 1 lemon 
  • Freshly ground black pepper
  • Salt
  • Two 5-ounce packages mixed baby greens 
  • 2 pears, thinly sliced 
  • 110g crumbled feta

Instructions:

  1. Preheat the oven to 180 °C.
  2. Spread out the walnuts on a baking sheet and bake until they are toasted, which usually takes around 8 to 10 minutes. Allow them to cool before chopping them into smaller pieces. Set aside.
  3. Mix olive oil, miso, vinegar, honey, and a dash of pepper in a medium bowl. Whisk the ingredients together until they are thoroughly combined. Taste the dressing and adjust the flavor with salt and more pepper if needed.
  4. In a large bowl, toss together the mixed greens, sliced pears, crumbled feta cheese, and chopped toasted walnuts. Pour the prepared dressing over the salad and mix well to ensure everything is coated. Serve the salad on individual plates immediately.
