- 1/3 cup extra-virgin olive oil
- 1 tablespoon red wine vinegar
- Kosher salt and freshly ground black pepper
- 3 cups baby arugula
- 1 pint grape tomatoes, sliced in half lengthwise
- 1 green apple, diced
- 1 hothouse cucumber, sliced into 1/4-inch-thick half moons
- 1 orange, peeled and cut into segments ("supremes")
Instructions:
- Place the farro in a large bowl and immerse it in cold water. Let it soak for 30 minutes.
- Next, transfer the farro into a large saucepan and pour in the chicken stock along with 4 cups of cold water. Place the saucepan over high heat and bring it to a boil. After that, drain the farro and mix it with olive oil and red wine vinegar. Season it with salt and pepper. Let it cool down slightly.
- Combine the farro, arugula, tomatoes, apples, cucumber, and orange supremes in a large bowl. Store it in the refrigerator until you are ready to serve.
