Fancy and beautiful tomato salad

Indulge in a flavorful medley of ripe tomatoes in this elegant and delightful salad. Perfect for a gourmet experience with a burst of fresh flavors.

Ingredients:

  • 1½ lb. heirloom tomatoes (about 3 medium), sliced into 8–12 wedges, depending on size
  • 12 oz. mixed cherry tomatoes (about 2 cups), halved, quartered if large
  • 1¾ tsp. kosher salt, divided, plus more
  • 1 lemon
  • ½ garlic clove
  • 6 Tbsp. extra-virgin olive oil
  • 2 Tbsp. za’atar
  • 2 cups pita chips
  • 1½ tsp. (or more) honey
  • 3.5 oz. feta, thinly sliced into planks
  • ½ cup basil leaves, torn if large
  • ½ cup mint leaves, torn if large

Instructions:

  1. Gently mix heirloom and cherry tomatoes with 1¼ tsp. salt in a medium bowl and keep it aside.
  2. Use a fine grater to grate lemon zest into a small bowl, then grate the garlic into it; set the lemon aside.
  3. Warm oil in a small saucepan or skillet over medium heat until it just starts to shimmer. Add za'atar and cook, stirring occasionally, until it becomes fragrant and slightly darkened in color, which should take about 1 minute. Add lemon zest and garlic, cook for 10 seconds, then remove from heat. (The goal is to cook out the rawness of the garlic while maintaining the freshness of the lemon flavor.) Transfer the za'atar oil to a heatproof measuring cup.
  4. Place pita chips in a large bowl and drizzle 2 Tbsp. of za'atar oil over them; add salt to season. Stir well with a rubber spatula, trying to coat the chips evenly without breaking them into small pieces.
  5. Cut the lemon that was set aside in half and squeeze the juice from one half into a small bowl. Mix in honey and the remaining ½ tsp. of salt. Slowly incorporate the remaining za'atar oil, stirring constantly until the mixture is emulsified. Taste the dressing and adjust by adding more lemon juice, honey, or salt as needed.
  6. Combine feta, basil, mint, and the reserved tomatoes in the bowl with the chips. Drizzle the dressing over the mixture and gently toss to mix everything together.
  7. Serve the salad on a platter, ensuring not to leave any juices behind. Enjoy it quickly for a crunchy chip experience or let it sit for a crispy-turned-soggy sensation.
