Fall-inspired chicken salad

Indulge in a delightful fall-inspired chicken salad bursting with autumn flavors. Perfect blend of savory chicken, crisp greens, and seasonal ingredients.

Ingredients:

  • 1 large chicken breast, butterflied
  • 2 tablespoons cajun seasoning
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons maple syrup
  • 2 teaspoons Dijon mustard
  • 2 teaspoons spicy brown mustard
  • 1 small shallot, minced
  • 1 garlic clove, minced
  • salt and pepper, to taste
  • mixed salad greens
  • 1 Granny Smith apple, cored and sliced
  • 1/4 cup fruit and nut trail mix

Instructions:

  1. Rub both sides of the chicken breast with the cajun seasoning blend.
  2. Heat up a big saute pan over medium high heat and drizzle roughly a tablespoon of olive oil. Put the chicken breast in and cook for approximately 4-5 minutes, or until it turns brown. Turn it over and cook for another 4-5 minutes, or until it's thoroughly cooked. Place the chicken on a cutting board to rest.
  3. Prepare the vinaigrette by mixing together olive oil, apple cider vinegar, maple syrup, Dijon mustard, spicy brown mustard, shallot, and garlic in a small bowl. Whisk until the mixture is well combined (no separation of acid and oil). Season with salt and pepper, to your liking.
  4. In a large bowl, coat the greens with around 2 tablespoons of the vinaigrette and distribute them between two plates. Sprinkle trail mix and sliced apples over the greens. Then, add the sliced chicken breasts on top. Serve with extra dressing, if preferred.
