Falafel patties with tomato salad

Ingredients:

  • 2 15-oz. cans chickpeas, drained and rinsed
  • .50 cup jarred harissa (such as Mina), plus more for serving (optional)
  • 1 cup loosely packed fresh cilantro leaves and/or flat-leaf parsley leaves, finely chopped
  • .50 cup panko
  • 1 tablespoon fresh lemon juice (from 1 lemon)
  • 1.50 teaspoons kosher salt
  • Freshly ground black pepper
  • 2 tablespoons olive oil
  • 2 avocados
  • 4 brioche buns, split and toasted
  • Sliced tomatoes, sliced red onion, and red leaf lettuce, for topping

Instructions:

  1. Combine chickpeas and harissa in a spacious bowl. Crush them with a masher or fork until you get a roughly textured paste; keep some chickpea pieces slightly larger. (As an alternative, blend chickpeas and harissa in a food processor and pulse until you achieve a coarse paste, around 8 to 10 pulses.) Introduce herbs, panko, lemon juice, salt, and a few twists of pepper. Mix and gently mash the mixture until it is thoroughly combined. Allow it to rest at room temperature for 15 minutes or refrigerate it, covered, for up to overnight.
  2. Shape the mixture into 4 patties that are about ¾ inch thick. Warm oil in a large nonstick skillet over medium heat. Place the patties in the skillet and cook, turning them over once, until they turn golden brown, approximately 3 minutes per side.
  3. Crush the avocados and spread them evenly on both halves of the buns. Construct the burgers using the patties, tomatoes, onions, and lettuce. Serve with additional harissa on the side, if preferred.
