Fajita steak salad

Ingredients:
- 1 2-lb. flank steak
- 2 tablespoons fajita seasoning
- 1 red onion, sliced into ½-in. rounds
- 2 red, orange, or yellow bell peppers, seeds and ribs removed, quartered lengthwise
- 2 tablespoons olive oil, plus more for grill grates
- ¾ teaspoon kosher salt, divided
- ¼ cup sour cream
- 3 tablespoons fresh lime juice (from 2 limes)
- 1 12-oz. pkg. romaine lettuce hearts, chopped (8 cups)
- 1 avocado, sliced
Instructions:
- Preheat the grill until it reaches a medium-high temperature of 450°F to 500°F and lightly grease the grates with oil. Season the steak with fajita seasoning. Coat the onion with oil and a pinch of salt, trying to keep it intact without separating it into rings. Repeat the same process with the bell peppers.
- Place the seasoned steak on one side of the grill grates and the onion and bell peppers on the opposite side. Cover and grill until the steak, onion, and bell peppers develop a deep char, which usually takes 5 to 6 minutes. Turn the steak and veggies over; continue grilling until the vegetables are soft and the steak shows a charred exterior. A meat thermometer inserted into the thickest part should read 135°F for medium-rare doneness, typically requiring an additional 5 to 6 minutes. Remove from the grill and let it sit for 5 minutes. Proceed by thinly slicing the steak against the grain, cutting the bell peppers lengthwise, and separating the onion slices.
- While allowing the steak to rest, combine sour cream, lime juice, and the remaining ½ teaspoon of salt in a large bowl. Set aside ¼ cup of the dressing for later use. Mix romaine lettuce with the rest of the dressing in the bowl, ensuring the leaves are evenly coated. Present the dressed romaine alongside the steak, bell peppers, onion, and avocado. For added flavor, drizzle with the reserved dressing.
