Everything's grilled salad

Enjoy a delectable symphony of flavors with this grilled salad. Fresh, vibrant ingredients perfectly charred to create a culinary masterpiece.

Ingredients:

  • 2 boneless (skinless chicken breasts)
  • 2 ears corn
  • 2 small zucchinis (1/4 inch sliced the long way)
  • 1 avocado (halved and pit removed)
  • 2 romaine hearts (chopped)
  • 1 large tomato (cut into wedges)
  • 1/4 cup almonds (sliced)
  • Olive oil for brushing
  • Salt
  • Lemon pepper or regular pepper

Instructions:

  1. Heat up the grill to medium/low temperature. Coat both sides of the chicken with olive oil and season with a bit of salt and lemon pepper. Grill the chicken for approximately 5-6 minutes per side.
  2. Place the corn on the grill and cook for around 10 minutes, turning it occasionally. Coat the zucchini and lemon slices with olive oil. Grill the lemon slices for about 3-4 minutes per side. Grill the zucchini slices for 2-3 minutes per side.
  3. Apply olive oil to the avocado and grill it with the cut side down for a couple of minutes until grill marks appear. Take everything off the grill and let them cool while you prepare the dressing.
  4. For the dressing, combine the grilled lemons, shallot, olive oil, salt, and 3 tablespoons of water in a blender. Blend until smooth, adding more water if needed to reach desired consistency.
  5. In a large bowl or platter, mix the chopped romaine with diced grilled chicken, grilled corn kernels, grilled zucchini slices, tomatoes, diced avocado, and almonds. Drizzle the dressing on top and serve!
