Everything bagel salad
Indulge in a unique twist with this everything bagel salad. Drenched in flavorful dressings and topped with crunchy seeds, it promises a culinary adventure.
Ingredients:
- 2 (4-oz.) everything bagels, cut into 1-in. pieces
- 5 tablespoons (2 1/2 oz.) salted butter, melted
- 1 cup whipped cream cheese (about 5 1/2 oz.)
- ¼ cup plus 2 Tbsp. water
- 3 tablespoons chopped fresh dill
- 2 tablespoons champagne vinegar
- 1 ½ tablespoons chopped drained capers
- ½ teaspoon black pepper
- 340g fresh baby spinach (about 12 cups)
- ⅔ cup very thinly sliced red onion (from 1 [3 1/2-oz.] onion)
- 230g cold-smoked salmon, thinly sliced
- 1 Tbsp. plus 1 tsp. everything bagel seasoning
- Dill sprigs
Instructions:
- Preheat the oven to 400°F. Mix bagel chunks with melted butter on a baking sheet; arrange evenly. Bake in the preheated oven until golden, for about 8 to 10 minutes, flipping once halfway through baking. Allow to cool for approximately 10 minutes.
- Combine cream cheese, water, dill, vinegar, capers, and pepper in a large bowl until mixture is well blended (it will have a slightly chunky texture). Add spinach, onion, and crispy bagel pieces; mix together until everything is coated.
- Distribute spinach mixture evenly among 4 plates. Top each portion with salmon; sprinkle with everything bagel seasoning, and adorn with dill sprigs.
