Ensalada de palmitos (hearts of palm salad)

Ingredients:

  • 2 garlic cloves
  • One 28-ounce can or two 14-ounce cans of hearts of palm, drained
  • 1/ 3 cup extra virgin olive oil, or as needed
  • 1/ 2 cup whites of scallions, finely chopped
  • Dash of salt (optional)

Instructions:

  1. Blend the garlic until it forms a smooth paste using a food processor. Then, add the hearts of palm and blend until the mixture becomes a slightly textured purée. While the machine is running, slowly pour in the oil until the ingredients combine into a smooth and velvety purée. Note that the hearts of palm may absorb slightly more or less than 1/3 cup of oil, depending on their absorbency.
  2. Move the purée to a bowl for serving and mix in the scallions. Remember to taste the dish for seasoning and adjust salt if necessary. Enjoy the dish within a couple of hours.
