Ensalada de coditos dominicana (dominican macaroni salad)

Ingredients:

  • 230g whole-wheat macaroni
  • ½ cup mayonnaise
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon salt
  • ¼ teaspoon cracked black pepper
  • 1 large carrot, finely chopped
  • 1 medium green bell pepper, finely chopped
  • ½ cup corn kernels, thawed if frozen
  • ½ medium red onion, finely chopped
