Endive and asian pear salad

Ingredients:
- /2 cup coarsely chopped walnuts
- tablespoon water
- teaspoon sugar
- Large pinch of cayenne pepper
- Large pinch of coarse kosher salt
- 1/2 tablespoons extra-virgin olive oil
- 1/2 tablespoons vegetable oil
- tablespoon balsamic vinegar
- large bunch watercress, thick stems trimmed
- heads of Belgian endive (preferably red), sliced crosswise
- ripe Asian pear, halved, cored, thinly sliced
Instructions:
- Mix walnuts, 1 tablespoon of water, sugar, cayenne, and kosher salt in a small nonstick skillet. Stir over medium heat until the water evaporates, and the nuts are dry and turn golden, approximately 4 minutes. Take the skillet off the heat and let it cool. This step can be done in advance by preparing it 1 day before. Keep it sealed in a container at room temperature.
- Beat together olive oil, vegetable oil, and vinegar in a small bowl until well combined. Season the dressing with salt and pepper according to your taste. Combine watercress, endive, and pear in a large bowl. Pour the dressing over the salad and mix well. Finally, top it off with the prepared nuts.
