End-of-summer salad

Ingredients:

  • ¾ cup pearled farro, rinsed
  • 230g fresh green beans, trimmed
  • 450g peeled and deveined medium shrimp
  • 3 tablespoons apple cider vinegar
  • 1 tablespoon white miso
  • 1 tablespoon Dijon mustard
  • ⅓ cup olive oil
  • 340g cherry tomatoes, halved
  • 1.50 cups fresh corn kernels (from 3 ears)
  • .50 cup chopped cornichons
  • .50 teaspoon crushed red pepper, plus more for serving (optional)
  • .50 teaspoon kosher salt, plus more for boiling
  • 110g watercress, coarsely chopped (4 cups)
  • 1 cup torn fresh basil
  • .50 cup crispy fried onions (such as French's)

Instructions:

  1. In a large pot, heat 4 cups of water with a pinch of salt until it boils. Add farro and lower the heat to medium-low. Cook until the farro is just soft, approximately 25 to 30 minutes; then drain the water. Spread the cooked farro on a baking sheet with rims and let it cool down.
  2. Boil a pot of water with a good amount of salt. Cook the beans until they are tender, for about 4 minutes. Use tongs or a slotted spoon to transfer the beans to a colander, keeping the water in the pot. Rinse the beans with cold water and pat them dry before cutting each one in half.
  3. Bring back the pot of water to a boil. Add the shrimp and simmer over medium heat until they turn slightly pink, which takes about 2 minutes. Drain them and let them cool for around 15 to 20 minutes.
  4. Mix vinegar, miso, and mustard together in a medium bowl. Gradually stir in the oil.
  5. Combine tomatoes, corn, cornichons, farro, beans, and shrimp in a large bowl. Season with crushed red pepper, salt, and the miso mixture; mix well. Gently fold in the watercress and basil. Transfer the mixture to a platter or individual plates. Sprinkle fried onions on top and serve with extra crushed red pepper, if desired.
