Elotes inspired grilled corn salad

Indulge in the vibrant flavors of this elotes-inspired grilled corn salad. Smoky charred corn combined with creamy dressing creates a tantalizing dish.

Ingredients:

  • 3 Cobs of Corn
  • 3 Green Onions
  • 1 Avocado
  • 1 Lime
  • 1/4 cup Cilantro
  • 1 tablespoon Mayonnaise
  • 1 tablespoon Sour Cream
  • 1/4 cup Cotija (feta works too)
  • 1/4 teaspoon Chipotle powder

Instructions:

  1. Allow the corn to soak in its husks for about 30 minutes, then transfer to the BBQ and cook for 15 minutes.
  2. After the corn has steamed inside its husks, take it off the grill and dispose of the husks.
  3. Halve the avocado and carefully eliminate the stone from it.
  4. Arrange the corn cobs, avocado, and green onions on the grill to get a nice char.
  5. Combine mayonnaise, sour cream, chipotle, lime juice, and lime zest in a small bowl.
  6. Separate the corn kernels from the husks and place them in a large bowl with the diced avocado and green onions.
  7. Crumble the cheese, chop the cilantro, then add them to the bowl with the dressing.
  8. Mix the salad gently and season according to your preference.
