Elotes inspired grilled corn salad

Ingredients:
- 3 Cobs of Corn
- 3 Green Onions
- 1 Avocado
- 1 Lime
- 1/4 cup Cilantro
- 1 tablespoon Mayonnaise
- 1 tablespoon Sour Cream
- 1/4 cup Cotija (feta works too)
- 1/4 teaspoon Chipotle powder
Instructions:
- Allow the corn to soak in its husks for about 30 minutes, then transfer to the BBQ and cook for 15 minutes.
- After the corn has steamed inside its husks, take it off the grill and dispose of the husks.
- Halve the avocado and carefully eliminate the stone from it.
- Arrange the corn cobs, avocado, and green onions on the grill to get a nice char.
- Combine mayonnaise, sour cream, chipotle, lime juice, and lime zest in a small bowl.
- Separate the corn kernels from the husks and place them in a large bowl with the diced avocado and green onions.
- Crumble the cheese, chop the cilantro, then add them to the bowl with the dressing.
- Mix the salad gently and season according to your preference.
