Egg salad & watercress tea sandwiches

Indulge in the delightful flavors of egg salad paired with fresh watercress in these delectable tea sandwiches. Perfect for a light and satisfying meal.

Ingredients:

  • 2 tablespoons low-fat plain Greek-style yogurt or sour cream
  • 2 tablespoons mayonnaise
  • 2 teaspoons yellow mustard
  • Pinch of salt
  • Ground pepper to taste
  • 4 hard-boiled eggs, peeled and chopped
  • 1 medium celery stalk, finely chopped
  • 1 scallion, finely chopped
  • 4 slices thin whole-wheat sandwich bread, lightly toasted, if desired
  • 2 cups watercress

Instructions:

  1. Combine yogurt (or sour cream), mayonnaise, mustard, salt and pepper in a medium bowl by whisking them together. Mix in eggs, celery and scallion until well combined. Place half of the egg salad on one piece of bread, then layer with 1 cup of watercress and another bread slice. Repeat this process with the rest of the ingredients. Cut each sandwich into 4 triangular pieces.
