Egg salad on radish slices canape

Ingredients:

  • 1/2 cup mayonnaise, homemade preferred
  • 6 hard-boiled eggs
  • 6 chives, cut into 1-inch lengths
  • salt and pepper to taste
  • 6 radishes, thinly sliced

Instructions:

  1. For slicing the eggs precisely, I use the tool that I typically use for preparing pie crusts - a pastry blender. Cut the hard-boiled eggs in half, transfer them to a bowl, and crush them using the blender or a fork. Add salt and pepper to your liking.
  2. Take a small amount of egg salad with a spoon and place it on top of thinly sliced radishes. Decorate with chopped chives. Serve right away. Store any remaining egg salad in the refrigerator.
