Egg salad lettuce wraps

Delight in the freshness of egg salad nestled in crisp lettuce leaves. A healthy, flavorful combination perfect for a light and satisfying meal.

Ingredients:

  • ¼ cup plain nonfat Greek yogurt
  • 1 tablespoon mayonnaise
  • ½ teaspoon Dijon mustard
  • Pinch of salt
  • Ground pepper to taste
  • 3 hard-boiled eggs, peeled
  • 2 stalks celery, minced
  • 2 tablespoons minced red onion
  • 2 or 3 large iceberg lettuce leaves
  • 1 tablespoon chopped fresh basil
  • 2 carrots, peeled and cut into sticks

Instructions:

  1. Combine yogurt, mayonnaise, mustard, salt, and pepper in a medium bowl by whisking them together. Remove one egg yolk. Dice the rest of the eggs and put them in the bowl. Mix in celery and onion. Halve the lettuce leaves and use two layers to create each of the two lettuce wraps. Distribute the egg salad evenly between the wraps and garnish with basil. Accompany with carrot sticks for serving.
