Egg salad grilled cheese sandwich

Ingredients:
- 2 Hardboiled eggs (chopped)
- 3 tbsp Plain Greek yogurt (2% or more)
- 1.5 tbsp Green onion (sliced)
- 1/2 tsp Onion powder
- 1/4 tsp Smoked paprika
- 1/4 tsp Garlic powder
- 1 tbsp Butter (room temp)
- 4 slices Bread
- 2 oz Cheddar
- Salt and pepper (to taste)
Instructions:
- Combine eggs, Greek yogurt, green onion, onion powder, smoked paprika, and garlic powder in a mixing bowl. Season with salt and pepper to your liking.
- Spread butter (3/4 tsp per slice) on one side of each bread slice. Preheat a griddle over medium-low heat.
- Place all bread slices on the heated griddle with the buttered side down. Add sliced cheese (1 oz per slice) on two of the bread slices.
- Cook until the cheese starts melting and the underside of the bread slices turns lightly golden and crispy, approximately 3-6 minutes.
- Move the slices to a plate. Evenly distribute the egg salad mixture among the bread slices with melted cheese. Complete by adding the remaining plain bread slice on top.
