Egg salad grilled cheese sandwich

Indulge in the delicious combination of creamy egg salad nestled between layers of melted cheese on perfectly grilled bread. Satisfy your cravings with this easy-to-make comfort food classic.

Ingredients:

  • 2 Hardboiled eggs (chopped)
  • 3 tbsp Plain Greek yogurt (2% or more)
  • 1.5 tbsp Green onion (sliced)
  • 1/2 tsp Onion powder
  • 1/4 tsp Smoked paprika
  • 1/4 tsp Garlic powder
  • 1 tbsp Butter (room temp)
  • 4 slices Bread
  • 2 oz Cheddar
  • Salt and pepper (to taste)

Instructions:

  1. Combine eggs, Greek yogurt, green onion, onion powder, smoked paprika, and garlic powder in a mixing bowl. Season with salt and pepper to your liking.
  2. Spread butter (3/4 tsp per slice) on one side of each bread slice. Preheat a griddle over medium-low heat.
  3. Place all bread slices on the heated griddle with the buttered side down. Add sliced cheese (1 oz per slice) on two of the bread slices.
  4. Cook until the cheese starts melting and the underside of the bread slices turns lightly golden and crispy, approximately 3-6 minutes.
  5. Move the slices to a plate. Evenly distribute the egg salad mixture among the bread slices with melted cheese. Complete by adding the remaining plain bread slice on top.
