Egg and potato salad
Delight in a combination of tender eggs and fluffy potatoes with our flavorful salad recipe. Perfect for a healthy and satisfying meal.
Ingredients:
- 1/2 cup plain yogurt
- 3 tablespoons tarragon vinegar
- Salt and pepper
- 1/4 cup finely chopped red onion or green onion
- 1 cup diced celery
- 1 cup diced red bell pepper (1/4 cup reserved for garnish)
- 4 hard boiled eggs, chopped
- Lettuce leaves
- 910g all purpose potatoes, peeled and quartered
- 1/4 cup mayonnaise
Instructions:
- Boil the potatoes until they are just tender, for about 20 to 30 minutes. While the potatoes are cooking, mix mayonnaise, yogurt, and vinegar in a glass mixing bowl. Season with 1/2 teaspoon of salt and freshly ground pepper. Add red onion, celery, 3/4 cup of bell pepper, and 2 chopped hard-boiled eggs to the bowl. Once the potatoes are cooked, drain and cube them into 1-inch pieces. Combine the cubed potatoes with the mixed ingredients and adjust the seasoning. Serve the salad on a lettuce bed and top with the remaining chopped egg and bell pepper.
