Effortless clementine, carrot and mint salad

Ingredients:

  • 12 clementines, peeled (2 clementines per person)
  • 2 large carrots, peeled
  • 1 teaspoon red onion, finely chopped
  • 1 tablespoon extra virgin olive oil
  • 1/2 teaspoon coarse kosher salt
  • 1 handful fresh mint leaves, torn

Instructions:

  1. After removing the peel from the clementines (a simple and fast job), cut them horizontally, similar to the equator. You should aim for approximately 5 - 6 slices per clementine. Place them on a spacious serving dish, slightly overlapping each other.
  2. Using a vegetable peeler, thinly slice the (already peeled) carrots directly onto the clementine slices. This will result in delicate curly pieces on top.
  3. Sprinkle the diced red onion over the assembled salad.
  4. Pluck fresh mint leaves from the stems. Once you have a generous handful, roughly tear them apart and scatter them over the salad wherever you desire additional color.
  5. Drizzle a generous amount of olive oil and coarse salt over the salad. Be generous as this ties all the flavors together.
