Effortless clementine, carrot and mint salad

Ingredients:
- 12 clementines, peeled (2 clementines per person)
- 2 large carrots, peeled
- 1 teaspoon red onion, finely chopped
- 1 tablespoon extra virgin olive oil
- 1/2 teaspoon coarse kosher salt
- 1 handful fresh mint leaves, torn
Instructions:
- After removing the peel from the clementines (a simple and fast job), cut them horizontally, similar to the equator. You should aim for approximately 5 - 6 slices per clementine. Place them on a spacious serving dish, slightly overlapping each other.
- Using a vegetable peeler, thinly slice the (already peeled) carrots directly onto the clementine slices. This will result in delicate curly pieces on top.
- Sprinkle the diced red onion over the assembled salad.
- Pluck fresh mint leaves from the stems. Once you have a generous handful, roughly tear them apart and scatter them over the salad wherever you desire additional color.
- Drizzle a generous amount of olive oil and coarse salt over the salad. Be generous as this ties all the flavors together.
