Eddie's mommy salad

Indulge in the flavors of fresh greens, ripe tomatoes, and tangy vinaigrette with Eddie's Mommy Salad. The perfect harmony of textures and tastes.

Ingredients:

  • 1/4 cup rice vinegar
  • 1 tablespoon wasabi powder
  • 1/4 cup soy sauce
  • 1/4 cup olive oil
  • 2 teaspoons sugar
  • 1 tablespoon minced shallots
  • 1 tablespoon minced pickled ginger
  • 450g shelled edamame
  • 1/2 cup small diced red bell pepper
  • 1/2 cup small diced daikon radish
  • 1/2 cup small diced jicama
  • 1/2 cup sliced green onions
  • 1/2 cup diced English cucumber

Instructions:

  1. Mix all the dressing components in a small glass bowl by stirring thoroughly with a fork.
  2. Heat up a large pot of water over medium heat until it boils, then put in the edamame. Let it cook briefly for 2 minutes. Drain the edamame and then add it to the bowl with the dressing.
  3. In another bowl of medium size that won't react, combine the rest of the vegetables and mix them with the edamame and dressing.
  4. Keep the bowl covered and place it in the refrigerator for a minimum of 30 minutes. Remember to stir it occasionally. Move the contents to a serving bowl and enjoy it cold.
