Eddie's mommy salad

Ingredients:
- 1/4 cup rice vinegar
- 1 tablespoon wasabi powder
- 1/4 cup soy sauce
- 1/4 cup olive oil
- 2 teaspoons sugar
- 1 tablespoon minced shallots
- 1 tablespoon minced pickled ginger
- 450g shelled edamame
- 1/2 cup small diced red bell pepper
- 1/2 cup small diced daikon radish
- 1/2 cup small diced jicama
- 1/2 cup sliced green onions
- 1/2 cup diced English cucumber
Instructions:
- Mix all the dressing components in a small glass bowl by stirring thoroughly with a fork.
- Heat up a large pot of water over medium heat until it boils, then put in the edamame. Let it cook briefly for 2 minutes. Drain the edamame and then add it to the bowl with the dressing.
- In another bowl of medium size that won't react, combine the rest of the vegetables and mix them with the edamame and dressing.
- Keep the bowl covered and place it in the refrigerator for a minimum of 30 minutes. Remember to stir it occasionally. Move the contents to a serving bowl and enjoy it cold.
