Eddie jackson's mason jar salad and salad dressing

Ingredients:

  • 1/4 cup thinly sliced red onion
  • 1/4 cup thinly sliced zucchini
  • 1/4 cup grated carrot
  • 1/4 cup thinly sliced English cucumber
  • 1/4 cup thinly sliced red bell pepper
  • 1/4 cup pumpkin seeds
  • 1/4 cup crumbled feta cheese
  • 1/2 cup thinly cut red leaf lettuce
  • 1/2 cup thinly cut kale

Instructions:

  1. To prepare Eddie's salad dressing: Combine parsley, olive oil, vinegar, honey, basil, oregano, tarragon, garlic, salt, and pepper in a food processor. Blend until mixture is smooth.
  2. For the mason jar salad: Begin by adding 1 to 2 tablespoons of the salad dressing into the base of a 16-ounce mason jar. Proceed to layer the proteins – chicken and garbanzo beans – at the bottom of the jar. Then, add the rest of the ingredients in this order (consider arranging them by color for an appealing look): red onion, zucchini, carrot, cucumber, bell pepper, pumpkin seeds, and feta. Finish off by placing the lettuce and kale on the very top. Seal the jar and store it in the refrigerator.
