Eccentric caesar salad

Ingredients:
- 1 cup raw cashews
- freshly ground black pepper
- 3 tablespoon fresh lemon juice
- 1/4 tsp curry powder
- 3 tablespoon nutritional yeast (see note)
- 1 tablespoon dijon mustard
- 3/4 tsp salt
- 1 large garlic clove
- 3 tablespoon extra-virgin olive oil
- 2 large heads romaine lettuce, chopped or torn into bite-size pieces
- 1 ripe avocado, medium dice
- 1/2 cup hemp seeds
- 1/3 cup capers
- 2 cups croutons
Instructions:
- Prepare the dressing by blending cashews, oil, lemon juice, nutritional yeast, mustard, garlic, salt, curry powder, and pepper in a food processor. Gradually add ¼ cup plus 3 tablespoons warm water while processing until the mixture is creamy and well combined, usually taking around 2 to 3 minutes. Remember to scrape down the sides of the bowl occasionally.
- Coat the romaine lettuce with ½ cup of the prepared dressing. Adjust the amount according to your preference. Distribute the lettuce evenly onto six plates, then garnish each serving with croutons, avocado slices, hemp seeds, and capers. Serve promptly.
