Easy tomato & balsamic pasta salad

Delicious tomato & balsamic pasta salad recipe bursting with flavors. Perfect blend of tangy balsamic and juicy tomatoes. Ideal for quick lunches.

Ingredients:

  • ¼ cup balsamic vinegar plus 2 tablespoons, divided
  • 2 tablespoons extra-virgin olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground pepper
  • 4 cups grape tomatoes (about 540g), halved
  • ½ cup thinly sliced white onion
  • ⅓ cup chopped fresh basil or parsley
  • 450g cooked whole-wheat bow-tie pasta

Instructions:

  1. Combine 1/4 cup vinegar, oil, salt, and pepper by whisking them together in a spacious bowl. Mix in tomatoes, onion, and either basil or parsley; blend them well. Chill the mixture, stirring occasionally, for a minimum of 1 hour. Mix in pasta and the additional 2 tablespoons of vinegar, ensuring everything is evenly coated.
