Easy soba noodle salad

Delight in a refreshing blend of seasoned soba noodles with vibrant vegetables and savory dressing in this simple yet fulfilling salad.

Ingredients:

  • 2 tablespoon rice-wine vinegar
  • 2 tablespoon white miso
  • 2 tablespoon soy sauce
  • 2 tablespoon honey
  • 2 tablespoon lime juice
  • 1 teaspoon grated ginger
  • 270g soba noodles
  • 1/2 cup thinly sliced radishes
  • 1/2 cup thinly sliced scallions
  • 1/2 cup diced green bell pepper
  • 1 cup peeled and sliced cucumbers
  • 1 cup shredded carrots
  • 1 tablespoon sesame seeds

Instructions:

  1. Beat together all the ingredients in a spacious bowl.
  2. Put a generous amount of water in a big pot and heat it until it boils. Put in the soba noodles and cook them for 4 minutes. Drain the noodles, wash them with cold water, and drain once more.
  3. Combine the soba noodles with the sauce in the large bowl. Add the radishes, green onions, bell peppers, cucumbers, and carrots. Mix well. Cover the bowl with plastic wrap and put it in the fridge for 30 minutes to let the flavors blend and the salad to cool.
  4. In a small frying pan, heat the sesame seeds on medium heat for around 3 minutes until they are browned and smell nice. Sprinkle them over the chilled salad before serving.
