Easy seared romaine salad

Ingredients:

  • 1 romaine heart
  • 4 tablespoons neutral oil
  • 1/2 teaspoon dried oregano (optional)
  • 1/2 teaspoon dried thyme (optional)
  • 1/2 teaspoon smoked paprika (optional)
  • 1/2 teaspoon garlic powder (optional)
  • 1 large avocado
  • 2 medium tomatoes
  • 1/2 lemon
  • 2 tablespoons vegan Caesar salad dressing
  • fresh cracked black pepper (to taste)
  • Pinch sea salt (optional)
  • 2 tablespoons nutritional yeast

Instructions:

  1. Clean romaine: Remove any damaged leaves from the romaine lettuce. Cut the romaine in half lengthwise, keeping the root intact. Rinse the romaine under cool water, making sure to separate the leaves for thorough washing. Pat the romaine dry using a kitchen towel or paper towel with the cut side facing down to absorb excess water.Prepare vegetables: Chop the tomatoes, slice the avocado into thick pieces, and cut the lemon into quarters. Keep them aside.Mix oil and any desired spices in a small bowl. Heat a large nonstick skillet over medium-high heat. Brush the oil onto the cut side of the romaine halves, ensuring it gets in between the leaves. Tilt the romaine with the root up to remove any excess oil.Place the romaine halves cut-side down in the hot skillet. Sear for 3-4 minutes until they turn golden brown. Use tongs to lift the romaine at the 3-minute mark to check for doneness.To serve, place the seared romaine halves cut-side up on a plate. Add the diced tomatoes and sliced avocado, gently breaking up the avocado pieces. Drizzle with the prepared dressing, sprinkle with nutritional yeast, and season with salt and freshly ground pepper. Serve with lemon wedges.
