Easy lentil salad

A delightful lentil salad recipe bursting with fresh flavors, hearty textures, and zesty dressing. Perfect for a light and nutritious meal.

Ingredients:

  • 3 cups cooked brown lentils (see Tip)
  • 3 medium celery stalks, halved lengthwise and thinly sliced
  • 2 medium carrots, halved lengthwise and thinly sliced
  • ½ cup chopped red bell pepper
  • ½ cup chopped yellow bell pepper
  • ¼ cup chopped scallion
  • 2 tablespoons fresh lemon juice
  • 1 ½ tablespoons white-wine vinegar
  • 2 teaspoons Dijon mustard
  • ½ teaspoon honey
  • ½ teaspoon salt
  • ½ teaspoon ground pepper
  • ¼ cup extra-virgin olive oil

Instructions:

  1. Delicately mix together lentils, celery, carrots, red bell pepper, yellow bell pepper, and scallion in a spacious bowl; set aside.
  2. Combine lemon juice, vinegar, mustard, honey, salt, and pepper in a small bowl. Slowly whisk in oil until thoroughly mixed. Carefully fold the dressing into the lentil mixture. Enjoy at room temperature or store covered in the refrigerator until serving time (for up to 5 days).
