Easy kale salad with pecorino and pine nuts

Ingredients:
- 1 bunch kale
- 2 tablespoons extra virgin olive oil
- 1 tablespoon lemon juice
- 1 zest of 1 lemon
- 1 pinch good salt
- 1 handful pine nuts, toasted
- 2-3 tablespoons pecorino romano
- Dash black pepper
- 1/4 cup raisins, optional
Instructions:
- Rinse and pat dry the kale leaves.
- Remove the stems by folding the kale in half and pulling off the thick stems. Gather the leaves and slice them into 2-inch strips. Place in a bowl.
- Combine olive oil, lemon juice, lemon zest, and salt in a small bowl.
- Pour half of the mixture over the kale and knead thoroughly for at least a couple of minutes, ensuring the dressing covers each leaf of kale. For tougher kale, knead more to ensure the dressing penetrates. If you find the kale needs more dressing after a minute of massaging, use the remaining mixture. Otherwise, store it for later use.
- Prior to serving, sprinkle pine nuts and pecorino cheese on top, and season with freshly ground black pepper.
- If you opt to include raisins, add them at this stage.
