Easy kale salad with pecorino and pine nuts

Delight in the vibrant flavors of an easy kale salad with nutty pecorino and crunchy pine nuts. A harmonious blend of textures and tastes awaits!

Ingredients:

  • 1 bunch kale
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice
  • 1 zest of 1 lemon
  • 1 pinch good salt
  • 1 handful pine nuts, toasted
  • 2-3 tablespoons pecorino romano
  • Dash black pepper
  • 1/4 cup raisins, optional

Instructions:

  1. Rinse and pat dry the kale leaves.
  2. Remove the stems by folding the kale in half and pulling off the thick stems. Gather the leaves and slice them into 2-inch strips. Place in a bowl.
  3. Combine olive oil, lemon juice, lemon zest, and salt in a small bowl.
  4. Pour half of the mixture over the kale and knead thoroughly for at least a couple of minutes, ensuring the dressing covers each leaf of kale. For tougher kale, knead more to ensure the dressing penetrates. If you find the kale needs more dressing after a minute of massaging, use the remaining mixture. Otherwise, store it for later use.
  5. Prior to serving, sprinkle pine nuts and pecorino cheese on top, and season with freshly ground black pepper.
  6. If you opt to include raisins, add them at this stage.
