Easy greek salad

Indulge in the delightful flavors of tangy feta, ripe tomatoes, crisp cucumbers, and briny olives in this simple and refreshing Greek salad. A taste of the Mediterranean in every bite!

Ingredients:

  • 1 head romaine lettuce, chopped
  • 4 whole ripe tomatoes, cut into 6 wedges each, then each wedge cut in half
  • 1 whole (large) cucumber, peeled, cut into fourths lengthwise, and diced into large chunks
  • 1/2 whole red onion, sliced very thin
  • 30 whole pitted kalamata olives, cut in half lengthwise, plus 6 olives, chopped fine
  • 170g crumbled feta cheese
  • Fresh parsley leaves, roughly chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon sugar, or more to taste
  • 1 clove garlic, minced
  • Salt and freshly ground black pepper
  • 1 whole lemon, for squeezing

Instructions:

  1. Place the diced lettuce, tomato slices, chunks of cucumber, slices of onion, halved olives, half of the feta cheese, and a sprinkle of parsley into a spacious bowl.
  2. In a separate bowl or a mason jar, mix together the olive oil, vinegar, sugar, minced garlic, 1/4 teaspoon of salt, black pepper, and chopped olives. Stir or shake well until everything is combined. Taste the dressing and adjust the seasonings according to your preference (I usually add a touch more sugar).
  3. Drizzle the prepared dressing over the salad ingredients, then season with salt and pepper. Gently mix everything together using tongs or your washed hands. Just before serving, sprinkle the remaining feta cheese over the top and drizzle a bit of freshly squeezed lemon juice.
