Easy gomae (japanese-style spinach salad)

Ingredients:
- Kosher salt
- 2 lb. frozen whole-leaf spinach, divided
- ¼ cup sesame seeds (not toasted)
- ¼ cup low-sodium soy sauce or tamari
- ¼ cup unseasoned rice vinegar
- 3 Tbsp. mirin (Japanese rice wine)
Instructions:
- Bring a large pot of water to a boil; add a generous amount of salt. Add half of the frozen spinach and cook, stirring occasionally, until heated through, for about 30 seconds. Using a spider or slotted spoon, move the spinach to a rimmed baking sheet and spread it out evenly. Bring the water back to a boil and repeat the process with the rest of the spinach. Let the spinach cool in the refrigerator for at least 30 minutes and up to 3 hours.
- Meanwhile, toast sesame seeds in a small dry skillet over medium-low heat, shaking the skillet now and then, until they turn slightly darker in color and release a fragrant aroma, approximately 4 minutes. Transfer the seeds to a plate and let them cool slightly. Place them in a sealable plastic bag, remove the air, and seal the bag. Crush the seeds with a rolling pin or a wine bottle until mostly crushed, with some seeds still intact; transfer to a large bowl. Add soy sauce, vinegar, and mirin and whisk together.
- Over the sink, take small amounts of spinach at a time and squeeze out excess water with your hands, then add them to the bowl with the dressing. Once all the spinach is in the bowl, toss it gently with your hands, ensuring there are no clumps so that the spinach is evenly coated.
