Easy black-bean corn salad

Ingredients:

  • 2 cans black beans, rinsed and drained
  • 1 can yellow whole kernel corn, drained
  • 1 green bell pepper, sliced
  • 2 stalks green onions, white part only, sliced
  • 2 tomatoes, fresh, diced medium
  • 1 bunch fresh cilantro, coarsely chopped
  • 1 lime, juice only
  • salt and pepper to taste
  • avocado slices to garnish

Instructions:

  1. Combine all the ingredients in a bowl, add the juice of a lime, sprinkle with freshly chopped cilantro and salt. Mix well, cover, and refrigerate for an hour to cool and allow the flavors to meld.
