Double radish salad with feta and buttermilk pesto dressing

Ingredients:
- 1 bunch radishes with greens still attached
- 1 large garlic clove
- 2 tablespoons buttermilk
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- a few basil leaves
- salt
- fresh ground black pepper
- 30g fresh feta
Instructions:
- Detach the tops from the radishes and trim most of the stems from the leaves. Rinse and pat dry the leaves.
- Rinse the radishes and cut them into quarters. Transfer to a bowl and sprinkle with a hint of salt.
- Combine the garlic and walnuts in a food processor and pulse briefly.
- Include half of the radish greens (approximately 1-1/2 cups loosely packed), along with the basil leaves, olive oil, lemon juice, and buttermilk in the food processor and blend until all the greens are finely chopped.
- Season with salt and pepper to your liking and pulse a few more times to combine everything.
- Cut the feta into cubes and add it to the bowl with radishes. Drizzle a few spoonfuls of the dressing over the top and mix gently to coat everything.
- Serve and enjoy.
