Double radish salad with feta and buttermilk pesto dressing

Indulge in the vibrant flavors of double radish salad, harmonized with creamy feta and zesty buttermilk pesto dressing. A culinary delight bursting with freshness.

Ingredients:

  • 1 bunch radishes with greens still attached
  • 1 large garlic clove
  • 2 tablespoons buttermilk
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • a few basil leaves
  • salt
  • fresh ground black pepper
  • 30g fresh feta

Instructions:

  1. Detach the tops from the radishes and trim most of the stems from the leaves. Rinse and pat dry the leaves.
  2. Rinse the radishes and cut them into quarters. Transfer to a bowl and sprinkle with a hint of salt.
  3. Combine the garlic and walnuts in a food processor and pulse briefly.
  4. Include half of the radish greens (approximately 1-1/2 cups loosely packed), along with the basil leaves, olive oil, lemon juice, and buttermilk in the food processor and blend until all the greens are finely chopped.
  5. Season with salt and pepper to your liking and pulse a few more times to combine everything.
  6. Cut the feta into cubes and add it to the bowl with radishes. Drizzle a few spoonfuls of the dressing over the top and mix gently to coat everything.
  7. Serve and enjoy.
