Dilled white bean and grape tomato salad

Delight in the freshness of dilled white bean salad with juicy grape tomatoes. A perfect blend of herbs and vegetables in one satisfying dish.

Ingredients:

  • 15-ounce cans cannellini (white kidney beans), rinsed, drained
  • 1/2t cups halved grape tomatoes (about 340g) or cherry tomatoes
  • /3 cup diced red onion
  • /4 cup chopped fresh dill
  • /4 cup extra-virgin olive oil
  • tablespoons fresh lemon juice
  • tablespoon balsamic vinegar
  • garlic cloves, pressed

Instructions:

  1. Mix together all the ingredients in a big bowl. Add salt and pepper for seasoning. Allow the mixture to soak at room temperature for 60 minutes. If preparing in advance, you can make it a day ahead. Remember to cover and refrigerate. Before serving, bring the salad to room temperature.
