Dijon herbed egg salad toasts

Indulge in the flavors of tangy Dijon mustard and aromatic herbs with these delightful egg salad toasts. A savory treat for your taste buds!

Ingredients:

  • 10 slices pumpernickel or rye bread
  • 8 eggs, hard-boiled, peeled and chopped
  • 2 stalks celery, finely chopped
  • 1 tablespoon freshly chopped chives
  • 1 tablespoon freshly chopped parsley leaves
  • 2 tablespoons Dijon mustard
  • 1/3 cup mayonnaise
  • 3 slices bacon, cooked crisp and cut into shards
  • Salt and freshly ground black pepper

Instructions:

  1. Toast the bread slices and slice each piece into 4 triangles. Keep aside.
  2. Combine all the other ingredients in a big bowl until thoroughly mixed. Add salt and pepper as desired.
  3. Just before serving, place the toast triangles neatly on a serving plate and place approximately 1 tablespoon of egg salad on each piece. Garnish with pieces of crispy bacon and serve.
