Deviled potato salad

Ingredients:

  • 5 all-purpose potatoes, peeled and diced
  • Coarse salt
  • 1/4 onion
  • 3 tablespoons prepared yellow mustard
  • 1/2 cup mayonnaise, eyeball the amount
  • 1 teaspoon sweet paprika
  • Salt and freshly ground black pepper
  • 2 scallions, thinly sliced, for garnish

Instructions:

  1. Cook the potatoes in a pot of salted boiling water until they are soft, which should take around 10 minutes. Once they are cooked, drain the potatoes and put them back in the pot over low heat to remove any excess moisture. After letting them sit for 2 minutes, transfer the potatoes to a baking sheet to cool quickly.
  2. Start by grating 1/4 of an onion into a medium mixing bowl. Combine the grated onion with mustard, mayonnaise, paprika, and cayenne pepper sauce. Mix everything together well. Add the cooked potatoes to the bowl and gently mix to coat them with the dressing. Season the potato salad with salt and pepper, then taste and adjust the seasoning if needed. Garnish the salad with chopped scallions before serving.
