Detox broccoli bean salad
Refresh and revitalize with a nutritious detox broccoli bean salad bursting with antioxidants and flavor. Perfect for a healthy meal or side dish.
Ingredients:
- 5-6 cups broccoli florets
- 430g can butter beans, drained and rinsed
- 5 green onions, sliced
- 1/2 cup chopped fresh parsley
- 1 clove garlic, minced
- 2 teaspoons dijon mustard
- 1 teaspoon honey
- 1 tablespoon lemon zest
- 1/4 cup lemon juice, from approximately 2 lemons
- 1 tablespoon good-quality olive oil
- salt and pepper
Instructions:
- Cook broccoli florets in boiling water or steam for approximately 5-7 minutes, or until they are soft. While waiting, prepare the beans, green onions, and parsley.
- After the broccoli is cooked, take it off the heat to let it cool down. Create the dressing by mixing the garlic, mustard, honey, lemon zest and juice in a bowl. Blend in the olive oil and a pinch of salt and pepper.
- Combine the beans, green onions, and parsley with the broccoli and mix everything with the dressing. Add more salt and pepper to taste if needed.
