Detox broccoli bean salad

Refresh and revitalize with a nutritious detox broccoli bean salad bursting with antioxidants and flavor. Perfect for a healthy meal or side dish.

Ingredients:

  • 5-6 cups broccoli florets
  • 430g can butter beans, drained and rinsed
  • 5 green onions, sliced
  • 1/2 cup chopped fresh parsley
  • 1 clove garlic, minced
  • 2 teaspoons dijon mustard
  • 1 teaspoon honey
  • 1 tablespoon lemon zest
  • 1/4 cup lemon juice, from approximately 2 lemons
  • 1 tablespoon good-quality olive oil
  • salt and pepper

Instructions:

  1. Cook broccoli florets in boiling water or steam for approximately 5-7 minutes, or until they are soft. While waiting, prepare the beans, green onions, and parsley.
  2. After the broccoli is cooked, take it off the heat to let it cool down. Create the dressing by mixing the garlic, mustard, honey, lemon zest and juice in a bowl. Blend in the olive oil and a pinch of salt and pepper.
  3. Combine the beans, green onions, and parsley with the broccoli and mix everything with the dressing. Add more salt and pepper to taste if needed.
