Dashi-poached scallop salad with wasabi dressing

Ingredients:
- 2 tablespoons fresh lemon juice
- 1 teaspoon wasabi paste
- 1/4 cup canola oil
- Salt and freshly ground pepper
- 2 teaspoons instant dashi
- 4 cups water
- 12 sea scallops, sliced into thirds
- 110g mesclun
Instructions:
- Whisk together the lemon juice, wasabi paste, and oil in a bowl. Season with salt and pepper.
- In a big pot, heat the dashi and water until it starts to simmer. Gently add the scallops and cook just until they turn opaque, approximately 1 1/2 to 2 minutes. Remove from the pot, drain any excess liquid, and pat them dry. Put the scallops in a bowl and mix them with half of the prepared dressing.
- Combine the greens with the dressing in the same bowl and ensure they are evenly coated. Season with salt and pepper. Place the scallops on plates, add the greens on top, and it's ready to be served.
