Dakos (greek bread salad)
Indulge in the Mediterranean flavors of Dakos, a traditional Greek bread salad bursting with ripe tomatoes, creamy feta cheese, and zesty olive oil.
Ingredients:
- 1 loaf country bread, sliced into 1/2-inch thick slices
- 1 cup Greek olive oil, plus more for brushing on bread
- Salt and freshly ground pepper
- 1/4 cup fresh lemon juice
- 1 tablespoon chopped fresh dill, plus more for garnish
- 2 English cucumbers, quartered and cut into 1/2-inch dice
- 2 ripe beefsteak tomatoes, cut into 1/2-inch dice
- 1 red onion, peeled, halved and thinly sliced
- 340g feta cheese, crumbled
- Chili oil, for drizzling, optional
Instructions:
- Heat up the grill. Coat both sides of the bread with oil and sprinkle with salt and pepper. Grill the bread until it turns slightly golden. Transfer the grilled bread onto a plate and allow it to firm up at room temperature.
- While the bread is cooling, mix 1 cup of olive oil with lemon juice and dill in a medium bowl. Season with salt and pepper according to your preferences. Gently combine cucumber, tomatoes, onion, and feta cheese with the oil mixture and let it rest at room temperature for half an hour. Spread the mixture over the bread. Decorate with extra dill and a drizzle of chili oil, if desired. Serve promptly.
