Curried turkey salad

Delight in the aromatic fusion of curried seasonings with tender turkey in this vibrant salad bursting with savory flavors and refreshing crunch.

Ingredients:

  • 1 large egg yolk
  • 1 tablespoon fresh lemon juice
  • 5 canola oil
  • 1/4 cup minus 1.5 T extra virgin olive oil
  • 1/2 teaspoon curry powder
  • 3 cups cubed roast turkey
  • 1/3 cup dried cherries, chopped
  • 1/2 cup salted cashew halves, toasted
  • 1 scallion, chopped

Instructions:

  1. Combine the egg yolk, lemon juice, and a pinch of salt in a medium bowl. Slowly add the canola oil a few drops at a time while whisking continuously. As the mayonnaise starts to thicken, gradually pour in the remaining canola oil, continuing to whisk vigorously.
  2. After incorporating all the canola oil, gradually mix in the olive oil. Follow by whisking in the curry powder. Taste and adjust seasoning with more salt and curry according to your preference. Reserve approximately half of the mayo for the turkey salad.
  3. In a bowl, mix together the diced turkey, chopped cherries, toasted cashews, and chopped scallions. Gently combine and then fold in half a cup of the curry mayo. Add more mayo if desired. Serve with arugula and crusty bread!
