Curried couscous salad

Ingredients:

  • 2 tablespoons Curry powder
  • 1 tablespoon Olive oil or coconut oil
  • 1 cup Whole wheat couscous
  • 1 cup Water
  • 2 cups Cubed, cooked tofu (I baked and then sautéed)
  • 1 cup Steamed green peas
  • 1 cup Shredded carrots
  • 5-6 Green onions
  • 2 tablespoons Pine nuts
  • 1-3 pinches Cayenne pepper
  • Salt and pepper to taste

Instructions:

  1. Heat water, oil, and curry powder in a pot until boiling. Stir in Cous-Cous. Turn off the heat and allow it to sit for 10 minutes. Then, transfer it to a big bowl and use a fork to separate the grains.
  2. Include the remaining ingredients! Decorate with cilantro and/or toasted coconut flakes. Straightforward, tasty & efficient. Enjoy it at room temperature or chilled. Have it for your work lunches every day this week. Embrace it.
