Delight in the aromatic blend of curry spices with tender chicken in this zesty salad sandwich. Perfect for a gourmet meal bursting with flavors.
Ingredients:
- 2 cups mayonnaise
- 1/2 cup commercial chutney
- 3 tablespoons mild curry powder
- 6 bone-in chicken breasts
- Kosher salt and freshly ground black pepper
- 1/2 cup coarsely chopped walnuts
- 1/2 cup dark raisins
- 3/4 cups finely chopped celery
- 4 croissants
Instructions:
- For the dressing: Mix mayonnaise, chutney, and curry powder in a small bowl. Stir thoroughly and set aside.
- For the sandwiches: Season chicken breasts with salt and pepper, then place them in a large skillet. Pour enough water to cover the chicken. Cover the skillet with a lid and gently cook the chicken until it is fully cooked, approximately 20 minutes. Take the chicken out of the poaching liquid and refrigerate for at least 1 hour. Once the chicken is cold, remove the skin and slice the meat off the bones. Dice the chicken and place it in a large bowl. Combine with walnuts, raisins, and celery, then mix well. Add the curry dressing to the salad for moisture. Slice the croissants in half, fill each with chicken salad, and serve.
